This summer my boys and I created a summer ritual of having popsicles out in the fort out in our backyard.
We talk, check on our vegetable garden we planted, lick our popsicles, make a bit of a melting-popsicle mess, and hose off. It’s summer. It’s delightful!
My five year old really wanted popsicles with strawberries, so here’s our latest creation! It’s a super simple and healthy popsicle to make, with just two ingredients! They’re sweet, with no sugar added, and are refreshing and delicious! A perfect summertime snack or dessert! And aren’t they cute!?
Ingredients:
- 14 medium sized strawberries, washed, dried and hulled
- 1 1/2 cups orange juice
- 14 popsicle sticks
Preparation:
Makes 14 small popsicles
Total prep time: about 1 hour and 15 minutes (1 hour is freezing time)
Make the popsicles in a standard ice-cube tray. Place one strawberry into each section of the tray, pointy side down. The strawberries should be snug. Then, using the berries for support, place a popsicle stick in the center of each one.
Now pour a bit of the orange juice around each strawberry, filling it just to the rim. Place the tray in the freezer for at least 1 hour. They should be completely solid before you try to remove them.
