Ingredients

  • 75 grams pancetta
  • 2 tablespoons olive oil
  • 1 onion, roughly chopped
  • 1 carrot, roughly chopped

  • 3 garlic cloves, roughly chopped
  • 250 grams 15% fat beef mince
  • 1 tablespoon tomato purée
  • 1 teaspoon dried mixed herbs
  • 400 grams cherry tomatoes, canned
  • 34 fluid ounce beef stock
  • 1 bay leaf
  • 150 grams of lasagna sheets, broken into shards
  • 30 grams parmesan, grated
  • 75 grams mascarpone
  • 10 grams basil leaves, torn (optional)

Preparation

  1. To make the lasagna soup recipe, first, take a large flameproof casserole dish, place it over low heat, and tip the pancetta into it. Stir often until all the fat has been released, leaving the pancetta crisp and golden (should take about 8-10 minutes). Now, remove it all into a bowl and set aside.
  2. Next, take a dish, place it on medium heat, and pour the olive oil into the dish. Once the oil is shimmering, add in the onions, carrots, and celery and cook for 15 minutes. Stir occasionally until the vegetables become soft. Then, add the garlic to the mixture and cook for another 2 minutes.

  7. While the mixture is cooking, add the lasagna sheets and simmer for another 5 minutes. Make sure to stir in between to break up the sheets.
  8. Meanwhile, mix parmesan, mascarpone, and seasoning as per your taste and heat the grill to high.
  9. Once the pasta is al dente and the lasagna soup is bubbling and has thickened, drop a dollop of the cheese mix on top and sprinkle over the remaining parmesan.
  10. Then, slide the lasagna soup under the hot grill for about 3-5 minutes until all the cheese is golden and bubbling.
