Mushroom Melts

Okay, so maybe this is just because I adore cooking and food, but it really thrills me that my boys love mushrooms.  So they’re not green, but they’re a very interesting culinary delight.   

I made this quick and easy dinner in one pan, and inside of 15 minutes my boys were eating a hearty meal.  My oldest even had a second and third helping and announced that I should put it on Momtastic!  So here it is!

Ingredients:

  • Olive oil to coat pan
  • 8 ounces crimini or button mushrooms, quartered
  • 1/2 teaspoon finely minced garlic
  • Salt and pepper to taste
  • 4 slices of sandwich bread
  • 1 cup grated mozzarella cheese

Preparation:

Serves 2 to 4

Total prep and cooking time: 15 minutes

Coat your largest saute pan with olive oil and add the mushrooms and garlic.  Cook over high heat, stirring periodically, until the mushrooms are browning nicely, about 10 minutes. Season generously with salt and pepper, and move the mushrooms to one side of the pan.  

Turn the heat to medium and add as many of your bread slices that will fit in the open side of the pan.  Sprinkle them with 1/4 cup of the cheese each.  Once the cheese melts, add 1/4 of the mushrooms on top. Remove them from the pan, place on a plate and serve! Voila!

(Finish the same way with any remaining bread slices.)
