Rainbow Cupcakes Recipe

St. Patrick’s Day is pretty much just an excuse for me to bake up a few “normal” treats and turn them into rainbow treats. Rainbow cakes look incredibly stunning, but they’re somewhat fussy to make. These rainbow cupcakes take a little more effort than plain ol’ vanilla cupcakes, but the results are so fun and stunning that they’re definitely worth the few extra steps.

My niece helped me fill the cupcake pans up with batter—precision isn’t totally necessary with this recipe so it’s a great one to bake with kids. Surprise everyone with color when they bite into these unassuming cupcakes topped with with white frosting. (Did I mention they’re super tasty?)
