- 6 orange bell peppers, medium-sized
- 227 grams of elbow macaroni
- 1 ¼ cups half-and-half
- 227 grams of cream cheese, room temperature
- 1 ½ cups mild cheddar, shredded
- Kosher salt
Preparation
- To make the mac-o-lantern and cheese bowl recipe, take two large bowls or pots. Boil generously salted water in one pot and fill another large bowl with ice water.
- Then, cut the tops off the orange bell peppers (don’t toss them, as they will be of use later), and also remove the seeds and membrane.

- Now, remove the saucepan from the heat, add the macaroni to the saucepan, and stir everything together until well combined. If needed, mix in some of the reserved pasta water to thin out the sauce.
