Ingredients
- 2 1020 grams boneless skin-on turkey breasts
- 4 tablespoons unsalted butter, melted
- 1 tablespoon pure maple syrup
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon smoked paprika
- ⅛ teaspoon ground cinnamon
- 4 large carrots, cut into 2-inch pieces
- 4 ribs celery, cut into 2-inch pieces
- 2 onions, cut into 6 wedges (medium-sized)
- 2 tablespoons olive oil
- Kosher salt and pepper
- 1 tablespoon turkey bouillon base
Instructions
- To make the air fryer Thanksgiving recipe, let 1 turkey breast sit at room temperature for 30 minutes. Keep the rest in the fridge.
- Meanwhile, take a small bowl, and mix all the other ingredients, like cumin, butter, maple syrup, coriander, paprika, and cinnamon.
- Then, take a large bowl and toss together celery, carrots, and onions with some oil and ½ teaspoon of salt and pepper.
- Now, heat your trusty air fryer to 350 degrees Fahrenheit to start cooking the turkey breast.
- Season first turkey breast with 1 teaspoon salt and ½ teaspoon pepper. Also, brush half of the butter mixture (about 2 ½ tablespoons) and tie with kitchen twine.
- Now, place the turkey breast in the air fryer, skin side down. Put half of the carrots, celery, and onions around the turkey breast and air-fry for about 30 minutes.
- After 30 minutes, flip the turkey breast to face skin side up and air-fry again until the internal temperature of the turkey reaches 165 degrees Fahrenheit (should take about 15 to 20 minutes).
- When done, transfer the turkey to a chopping board. Let it cool down for at least 20 minutes before slicing. Then, transfer the cooked vegetables from the air fryer to the blender and the drippings to a 4-cup liquid measuring cup. Set aside.
- Meanwhile, take out the second turkey breast and let it sit at room temperature. Season it with salt (1 teaspoon) and pepper (½ teaspoon). Brush the turkey with the remaining butter mixture and repeat the whole air-frying process with the remaining vegetables.
- Now, add the second batch of cooked vegetables to the blender with the first batch. Add drippings to the same measuring cup and skim off any fat (you should have 2 to 6 tablespoons of drippings by the end of it).
- Lastly, add enough water to equal about 3 cups and add to the blender. Pour the bouillon base and puree along with it and blend until smooth. Add more water if needed.
- Season with ¼ teaspoon of salt and pepper. Warm the gravy, if needed, and serve with impeccably sliced turkey.
