Ingredients for Martha Stewart’s Brioche Stuffing recipe

  • 907 grams of brioche bread, cut into 1″ cubes
  • ¾ cup unsalted butter (and some more for baking dishes)
  • 2 large yellow onions, chopped
  • 2 medium leeks, sliced (take only white and light green parts, and slice them thin into half-moons)
  • 2 apples, peeled and cut into ½” cubes
  • 2 pears, peeled and cut into ½” cubes
  • 3 large celery stalks, chopped
  • 1 tablespoon kosher salt (and 2 teaspoons more)
  • 1 tablespoon freshly ground pepper
  • ¼ cup fresh sage, chopped
  • 1 ¼ to 2 cups vegetable stock, store-bought
  • 2 large eggs, lightly beaten
  • ½ cup fresh flat-leaf parsley, chopped
  • 2 teaspoons poultry or turkey spice blend

Preparation

  1. To make Martha Stewart’s brioche stuffing recipe, take the bread cubes and spread them on two rimmed baking sheets. Let them dry overnight. To dry the bread quickly, bake it in a preheated 350 degrees Fahrenheit oven till it turns crispy but not golden. The process will take about 5-10 minutes.
  2. Then, preheat oven to 350 degrees Fahrenheit. Take a 14-inch straight-sided skillet, place it over medium-high heat, and melt your butter.

  6. Once combined, pour 1¼ cups of stock over the mixture. Add eggs, parsley, and poultry seasoning and stir everything together to combine. If you feel that the mixture is a bit too dry, add ¼ cup of stock at a time and combine to get the desired results. Once satisfied, season the vegetable, fruit, and stock mixture with the remaining 2 teaspoons of salt and 1 teaspoon of black pepper.
  7. Now, it’s time to bake this brioche stuffing recipe. For this, take a 13 x 9-inch baking dish and butter it up. Then, place 12 cups of the stuffing in the dish. You can put the rest in a buttered 8-inch square baking dish. Alternatively, you can use the 12 cups of stuffing to fill the turkey and place the remainder in the square baking dish.
  8. Lastly, place the baking dish in the oven and bake the stuffing until it is heated through and the top is browned (should take about 40 to 45 minutes).
