Easy Mini Banana Bread Loaves Recipe

Today being National Banana Bread Day, it only makes sense to make some mini banana bread loaves that will be loved by kids and adults alike. What started as a way to use overripe bananas has become a beloved dessert that is not too sweet. These mini banana bread loaves are perfect for your munchkins because they aren’t overly sweet and healthier than most other desserts.

If you have bananas in your home that are way past the state everyone enjoys, now is the time to whip those out. However, if you don’t have any bananas on hand, head to your local farmer’s market or supermarket and pick out the ripest bunch. Gather all your ingredients because today is the perfect day to bake yourself and your little ones some delectable mini banana bread treats!

Ingredients

  • 1 stick unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Butter and flour a standard 9×5 loaf pan.
  3. Mix butter and sugar until well combined.
  4. Add eggs and vanilla extract and mix well.
  5. Add mashed bananas and mix again until well combined.
  6. In a separate bowl, mix flour, baking soda, and nutmeg.
  7. Working slowly, stir the flour mixture into the egg mixture. Keep stirring until all flour is fully incorporated. The batter may still be a little lumpy from the bananas, which is normal.
  8. Pour batter into the prepared loaf pan.
  9. Bake for 25-30 minutes, or until top is golden and a cake tester comes out clean.
  10. Cool in the pan for 10 minutes.
  11. Carefully remove it from the pan and let it cool on a wire rack before serving.
