Clover Rice Krispie Treat Recipe for St. Patrick’s Day

With St. Patrick’s Day right around the corner, it’s time to start thinking about a day full of green. Green clothing, green food, green cocktails, and more! These easy four-leaf clover Rice Krispie treats are the perfect St. Patrick’s Day snack you and your kids will surely love eating. They are easy to make and can be made with kids even if you prepare them at the last minute.

You can make these cute St. Patrick’s Day Rice Krispie treats with just three ingredients, a little green food coloring, and a shamrock or clover-shaped cookie cutter. One pan will make you about 12 treats (and only about 10 minutes of work), depending on the size of your cookie cutter.

Ingredients

  • 4 ⅔ cups Rice Krispies cereal
  • 6 cups of mini marshmallows
  • 4 tablespoons salted butter

Preparation

  1. To make a clover-shaped Rice Krispie treat, start by lining a baking tray with parchment paper and set aside.
  2. Spray a large bowl with cooking spray and add the cereal. Set aside.
  3. Place the marshmallows with butter in a microwave-safe bowl and microwave for 1 minute on high. Stir very well until the mixture is smooth.
  4. Add green food coloring to the mixture. Stir and combine well. Add more color, if needed, to reach the desired shade.
  5. Pour the marshmallow mixture over the cereal and stir well until it is evenly coated. Top tip: spray the spatula with cooking spray for easy mixing.
  6. Scrape the treats onto the prepared baking tray.
  7. Spread and flatten gently in a rectangular or circular shape that is ¾ inch thick and roughly 10 inches by 12 inches. Let it cool for 2 hours. You can even put this in the refrigerator to speed up the process.
  8. Use the clover-shaped cookie cutter to cut out fun shapes, and enjoy!
