I’m finding myself constantly in the kitchen these days, with social distancing and staying home with my 3 and 1 year-old girls all day. I’m trying to make meals that require minimum clean-up. This version is not fried, but it is roasted with broccoli in a quick, flavor-packed soy marinade that takes only minutes to whip up. We’re serving ours over brown rice ramen noodles, but simple steamed rice will be great too.
