Super Easy Chicken Dumpling Soup Recipe

Nothing says comfort like a bowl of chicken dumpling soup. This cozy soup is easy to make, buttery, flavorful, and soul-soothing. It’s perfect for winter days or sick days. With just a handful of ingredients, you can make this delicious soup in no time, even if you’re making it for the first time.

You can also make this soup the day before and have it the next day. Just add the dumplings to the soup at the time of serving. If you add the dumplings and leave them in the soup before storing them in the refrigerator, they will absorb all the soup and won’t be delectably chewy.

Ingredients

For soup

  • 4 tablespoons butter
  • ½ cup onion, chopped
  • 2-3 carrots, chopped
  • 3 celery, sliced
  • 1 tablespoon garlic, minced
  • 8 cups chicken broth
  • 2 pounds chicken, boiled and shredded
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 bay leaves
  • 1 tablespoon dried parsley
  • 3 tablespoons cornstarch
  • 3 tablespoons water

For Dumplings

  • 1 ½ cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons butter, cold
  • ¾ cup milk

Preparation

For soup

  1. To make the chicken dumpling soup, melt the butter in a large 8-quart pot and add the onions, carrots, and celery (or any vegetables of your choice). 
  2. Cook and stir until the onion is translucent. Then, add in the garlic and cook for 30 seconds more. 
  3. Pour in the chicken broth and add your shredded chicken. For the final touch, season with salt, pepper, bay leaves, and parsley. 
  4. Bring your chicken dumpling soup to a boil. Then, turn down the heat and allow it to simmer while you make your dumplings.

For dumplings

  1. Combine flour, baking powder, and salt in a large mixing bowl. 
  2. Then, grate the cold butter into the flour mixture using a cheese grater and stir to combine.
  3. Pour in the milk and stir until the dough forms a ball. If needed, knead it a few times with your hands in the bowl. 
  4. Pull off one-inch pieces of the dough and drop into the soup. 
  5. Cover with a lid and simmer for 15-20 minutes, until the dumplings float to the top of the soup. 
  6. To thicken the soup, combine cornstarch and cold water and pour into the soup. Stir continuously until thickened.
