Quick Jambalaya Recipe for Lazy Winter Night

Looking for a quick, protein-packed recipe that is spicy, hearty, and full of flavors? This New Orleans classic is the answer! Easy to prep and make, this jambalaya recipe comes together in mere minutes, making it one of the best dishes for lazy winter nights. The best part is that you can make it in large quantities to enjoy it over 3-4 days by simply reheating it in the pan for a few minutes. Prolonged heating can make the dish more mushy and the shrimp chewy, so always be careful with that when you are reheating your jambalaya.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 yellow onion, chopped
  • 2 bell peppers, seeds and ribs removed, chopped
  • Kosher salt
  • Freshly ground black pepper
  • 450 grams boneless, skinless chicken breasts, cut into 1″ pieces
  • 1 teaspoon dried oregano
  • 170 grams andouille sausage, sliced
  • 2 tablespoons tomato paste
  • 2 cloves garlic, finely chopped
  • 2 cups low-sodium chicken stock
  • 1 can crushed tomatoes
  • 1 cup long-grain rice
  • 2 teaspoons Old Bay seasoning
  • 450 grams medium-sized shrimp, peeled and deveined
  • 2 scallions, thinly sliced

Preparation

  1. To make this jambalaya recipe, take a large pot, pour some oil, and place it over medium heat. Once the oil is hot, add onion and bell peppers. Then, season with salt and pepper. Cook the mixture, while stirring occasionally, until softened (should take about 7 minutes).
  2. Then, add in chicken, and oregano, seasoning everything with salt and pepper. Cook the chicken until it is golden (should take about 5 minutes).
  3. Now, add sausage, tomato paste, and garlic to the mixture. Cook until fragrant (should take about 1 minute).
  4. Then, add stock, tomatoes, rice, and Old Bay seasoning to the pan. Reduce heat to medium-low, and cover the pan with a tight-fitting lid. Cook the rice until tender and all the liquid is almost absorbed (should take about 20 minutes).
  5. Once cooked, open the lid, add shrimp, and toss until well combined with the rice mixture. Now, cook the shrimp until they turn pink and are just cooked (should take about 3 to 5 minutes).
  6. Lastly, divide the jambalaya among bowls and top with scallion at the time of serving.

Your delicious jambalaya recipe is ready to be relished on winter nights. It is an extremely versatile recipe, making it perfect to quickly whip up for a cozy family dinner. For instance, you can add in crawfish if you want to switch up the protein or toss in some okra and carrots for a vegetarian option. Just remember to use long-grain rice, as other types of rice might get mushy.
