Homestyle Italian Ham and Cheese Mini Muffins Recipe

I typically need to add fresh herbs to savory muffins, but the ingredients in the Farmhouse Originals Homestyle Italian Dressing are rich enough that I can skip that step, saving me time when school starts!

I love how all these wonderful scents fill my house with a comforting aroma when baking these muffins, which are not only are they delicious, but perfect size for my sons’ lunch boxes. And with the addition of the ham and cheese, I often serve them for weekend lunch treats for the whole family in place of sandwiches.

makes: 4 dozen mini muffins

Ingredients:

  • 1½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup whole milk
  • 1 large egg
  • 1/3 cup, plus 3 tablespoons Hidden Valley Farmhouse Originals Homestyle Italian Dressing, divided
  • 2 tablespoon olive oil
  • 1 cup thinly sliced ham, cut into a small dice
  • 3-1/4 cups grated Asiago cheese, divided

Preparation:

Step 1: Place a rack in the upper third of the oven and preheat the oven to 375 F. Add paper cupcake liners to 4 (12 cup) mini muffin pans and set aside.

Step 2: In a medium-sized mixing bowl, mix the flour with the baking powder, sugar, and salt. Set aside.

Step 3: In a small bowl, whisk the milk with the egg, ½ cup of the dressing, and olive oil.

Step 4: Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir just until the flour is incorporated.

Step 5: Fold in the ham and 1¾ cups of the cheese. Stir only until the ham and cheese are well distributed.

Step 6: Divide the batter between paper-lined mini muffin pans.

Step 7: Add a bit of the remaining 3 tablespoons of dressing and the remaining ½ cup of cheese on top of each muffin.

Step 8: Place in the oven and bake the muffins until they are golden brown and cooked through, about 20 minutes.

Step 9: Let the muffins cool for at least 15 minutes before serving.

Tip: When warm, paper cupcake liners will likely stick to the cheese in the muffins; let them cool to room temperature so the papers come off more easily. You can also grease and flour your muffin pan instead of using paper cupcake liners.
