Espresso-Dove Chocolate Cookies

I once met someone who didn’t like chocolate and coffee. A friendship never developed there.  How could it?
 

Coffee and chocolate are without question two of the most prized flavors in the world!  And combining the two to make these Espresso Dove Chocolate Cookies is simply magical.  

I would definitely call these “grown-up” cookies, as they’re loaded with caffeine, which is clearly not ideal for kids (who already have more energy then they know what to do with!)  

Watch out, these cookies are addicting!  

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 tablespoons plus 1 teaspoon instant espresso (I like Medaglia D’oro.)
  • 2 tablespoons heavy cream
  • 1 egg
  • 1/4 teaspoon baking soda
  • 2 1/4 cups all-purpose flour
  • 24 dark chocolate Dove squares

Preparation:

Makes approximately 2 dozen
Prep Time: 15 minutes
Cooking Time: 12 minutes

Preheat the oven to 350 degrees and line two baking sheets with parchment paper.  

In a medium-sized mixing bowl, combine the butter with the sugars, vanilla, espresso, and cream.  Once this is well blended, mix the egg in thoroughly.  Add the baking soda to the flour and add both slowly to the batter.  Mix only long enough to combine the ingredients.

Using a 1 1/4-inch scoop or your hands, form 1 1/4-inch balls of dough and place them on the parchment-lined baking sheet — only about 9 per sheet, as they will spread.

Gently press one chocolate dove square into each ball of dough. 

Then add a second 1 1/4-inch scoop of dough on top of each piece of chocolate and gently press that down to seal the edges, covering the chocolate completely.  

Sprinkle the cookies with a bit more of the espresso powder and place in the oven for about 12 minutes, just until the edges begin to turn golden.

Let the cookies set on the baking sheet for a few minutes and then place them on a cooking rack for about 10 minutes.
