Instead of just leaving them as is with ice cream and cookies I am adding an outer layer of crunchy walnuts. This added twist makes them so super-delicious I can’t even tell you. Sometimes I roll them in sprinkles or mini-chocolate chips and they are fantastic that way too.
To make crunchy ice cream cookie sandwiches:
- 4 soft chocolate cookies
- 2 scoops vanilla ice cream
- 1 cup walnuts, roughly chopped
1. Sandwich the vanilla ice cream between the cookies. Roll each cookie in the chopped walnuts. Serve!
