Gluten-Free Parmesan Pizza Crust

The texture is nothing like a traditional pizza crust, but it’s super delicious!  It’s a bit more like a firm, cheesy, corn bread.  The surface is crispy, while the inside remains soft.

Add any toppings you’d like!  My son’s favorite is tomato, cheese, and olives!

Ingredients:

1 whole egg
2 egg whites
1 tablespoon honey
4 tablespoons olive oil (plus a bit extra for the pan)
1/4 cup buttermilk
1 tablespoon apple cider vinegar
1 cup cornstarch
1/3 cup rice flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon xanthan gum
1/2 cup finely grated parmesan cheese

Preparation:

Serves 8
Total prep and cooking time: 20 minutes

Preheat the oven to 375 and line a baking sheet with foil.  

In a large mixing bowl, whisk the eggs with the honey, olive oil, buttermilk and cider.  Once it’s blended, use a spoon to mix in the cornstarch, flour, baking soda, baking powder, salt and xanthan gum.  Then fold in the cheese.  

Add a bit of olive oil to the center of your foil-lined baking sheet and coat your hands with it, too.  Pour the dough (which will be wet) onto the oil and use your hand to evenly spread it on the sheet.  Bake for about 12 to 15 minutes until it becomes firm and begins to brown.

Add your desired pizza toppings and bake until everything is heated through, about 5 to 10 minutes.  

An additional note:

Xanthan gum adds body and texture to gluten-free treats.  It’s available at Whole Foods.
