Avocado and Bacon Tart (Perfect for a Family Picnic)

Warm Sundays are made for a long lunches in the park. The ones where you pack a few snacks, lunch and a great picnic rug so you can relax while the kids run themselves in circles.

It’s funny, for me time seems to stand still on these outings. The joy of getting ready for them is also half the fun in my book. I love taking the time to bake something that will turn our everyday picnic into something special. Today I made this creamy avocado and bacon tart and some sweet chocolate brownies to eat afterwards. I packed everything we need in to a big basket, hubby grabbed a ball and a cricket bat and we set off with the kids on foot.

When we’re choosing a location, practicality does need to come into it. We chose one with a great view, amenities close by and when we can swing it, a fenced playground for the boys. Sounds tricky, but so many parks fit that bill perfectly for us.

A newspaper, a book and a phone full of good music always adds to the festivities. After a good run around the kids I don’t mind laying down on the rug under a tree and listening to an audio book or playing some of my boys’ favourite songs so they can have some quiet time. It always buys me a few extra pages of my book, so it’s a win, win.

Avocado and Bacon Tart Recipe

Ingredients:

  • 1 piece short crust pastry
  • ¾ cup milk
  • 4 eggs
  • 70g bacon, shredded and fried
  • 1 cup cheese, grated
  • 1 small onion, finely chopped
  • 2 tbsp coconut flour
  • 3 large Australian avocados

Instructions:

Step 1: Preheat your oven to 180°C and grease a 20 cm pie tin with a little olive oil. Lay your rolled piece of pastry over the tin and press it in to shape, chopping off the top if you need to. Blind bake the tart in the oven for 10 minutes using pastry weights or raw chickpeas.

Step 2: Meanwhile, whisk the eggs and combine them with the milk. Then, stir through the remaining ingredients until well combined.

Step 3: Pull the tart crust out of the oven and pour in the egg mixture. Return to the oven and bake for a further 30 minutes or until just set in the middle. Allow to cool before you top it with the avocado.

Step 4: Just before serving, spoon the avocados out of the skin and thinly slice. Split each half in half again and bend slightly, then arrange on your tart.
