Kid’s Hot Cocoa

Little ones aren’t always expressive about what goes on in their classroom, or on the schoolyard — but a nice cup of cocoa just might lure some information out of them!  When my two boys aren’t in the mood for chatting, I have them choose a book and read it while they have their cocoa.  Either way, I cherish these special times with them!

Ingredients:

  • 2 tablespoons heavy cream
  • 2 tablespoons cocoa powder
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup water
  • 2 cups non fat milk
  • A hand full of small marshmallows
  • Colorful sprinkles

Preparation:

Serves 2 to 4 kids

Total Prep and Cooking Time: about 10 minutes

In a small, deep mixing bow, use a whisk or an electric mixer with the whisk attachment to whip the cream to soft peaks.  Set it aside.

Add the cocoa powder, sugar, vanilla and water to a medium sized saucepan.  Turn the heat to medium-high and whisk until blended.  Once the mixture begins to bubble, slowly whisk in the milk.  Simmer just until warm, but not too hot.

 

Garnish each cup of cocoa with marshmallows, the whipped cream, and sprinkles.

 

Some additional notes:

Though I call this a “kids” cocoa, anyone will love it!

I prefer using non fat or low fat milk for the kiddos, but use any milk you’d like.
