Crock Pot Recipes Using Fall Apples

Crock Pot Applesauce

Ingredients:

  • 3 pounds of apples (try a mix of Macintosh and Fuji or just Macintosh)
  • 1/2 cup of water and 1/4 cup apple cider or apple juice
  • 1 small cinnamon stick or 2 teaspoons powdered cinnamon
  • 1 teaspoon of vanilla (optional)

Directions:

Prepare a 4 quart crock pot. Peel and core the apples then add them to the crock pot. Add the water and spices; stir well. Cover the crock pot and turn the heat to low. Simmer the apples for up to 8 hours. Check this every hour or so and give it a stir. Applesauce will be finished when it is the texture that you like; it can be made really chunky or thin and runny.

Crock Pot Apple Cornbread Pancakes

Ingredients:

  • 1 cup cornmeal
  • 1 cup white wheat flour
  • 1 1/2 cups milk (you can use soy, rice or even almond milk if preferred)
  • 1/3 – 2/3 cup sugar (as you prefer)
  • 3 teaspoons baking powder
  • 1 egg
  • 1/3 cup vegetable oil
  • 3/4 cup applesauce, homemade or jarred
  • pinch of: nutmeg, ginger, allspice and cinnamon

Directions:

Combine the cornmeal and milk in one bowl; let stand for 15 minutes. Combine the flour, sugar, spices and baking powder When the 15 minutes has passed, combine all of the ingredients and add the egg, oil and applesauce. Mix well until thoroughly blended. Warm a frying pan with a wee bit of EVVO or vegetable oil. Drop spoonfuls of batter into the frying pan and fry on each side for 3-4 minutes per side. The pancakes should get a little bubbly when it’s time to turn them over or you will see them puff up and the sides will look cooked.
