Raw Strawberry Mint Pudding

Yields ¾ cup.

  • 1 cup organic strawberries, rinsed and stems removed
  • 3 Tbsp. chia seeds
  • 1–2 mint leaves
  • ½ tsp. lemon juice
  • 1–2 Tbsp. pure maple syrup (quantity depends on ripeness of strawberries)

Directions:

Step 1: Add the strawberries, mint leaves, maple syrup, and lemon juice to a small food processor and blend for 1–2 minutes until smooth and creamy. 

Step 2: Remove the strawberry puree and place in a small bowl. Add the chia seeds, stir to combine, and let sit in the fridge for at least 45 minutes to one hour to allow the chia seeds to plump up and thicken.
